Ajay Kalsi is an ambitious and enthusiastic entrepreneur as well as an aerospace engineer. As he progressed in his career as an aerospace engineer he was also developing the skill of organising events and weddings not only in the UK but abroad as well. This skill made him realise that he could start his own business down the line, and he started looking into hospitality a little closer and saw a gap. The gap between the golden ages of cocktails and the new generation of cocktails. This gap influenced and encouraged him to start this new journey of The Rabbits Hole and bring back the art and crafts of the golden time. Every little bit of The Rabbits Hole was built from scratch. Ajay designed each and every corner of it, he dedicated himself to bringing his dreams into reality.

 

He exclusively spoke to Asian Voice about his speakeasy cocktail bar.

 

When did you start The Rabbit’s Hole?

 

The Rabbit’s Hole opened in September 2022. The progression from start to finish acquired almost five years as Covid-19 triggered a vast unanticipated deferral. During these five years, continuous work and research were transmitted to shape a strong and clear foundation to reach people’s hearts through our dedication and enthusiasm.

 

What makes The Rabbits Hole more special? 

 

All our unique cocktails are freshly made in the bar using fresh ingredients. We want to bring back the lost art of cocktails through a beautiful blend of freshness and creativity.

 

The Rabbit’s Hole tributes to the golden age of cocktails, bringing to you over 140 classic cocktails and ten of our own signature cocktails which are presented to you through a unique board game. 

 

The Rabbit’s Hole has been carefully designed to showcase an elegant setting for all our guests assuring a great customer experience.  

 

How has the cost of living crisis impacted your business? 

 

Unfortunately, this has impacted us from the front end as well as the back end. On the front end, we have seen a small decrease in the number of clients, although due to our reasonable prices and amazing customer service we have kept our regular clients which we are proud of making in such a short period of time. In the back end, we have been impacted by an increase in costs from suppliers, despite this, we are determined to not let this affect the quality of drinks provided to our clients. 

 

 

How has the autumn statement impacted you?

 

The autumn statement has currently left us unknown of the future as the Energy Bill Relief Scheme which has been supporting non-domestic users of energy such as ourselves will change after 31st March 2023, and a treasury-led review will determine the support for non-domestic energy users. Along with this, the business properties will be revalued for business tax from 1st April 2023. Although the help with the uncertainty the Autumn statement has ensured that there is a transnational relief provided to limit bill increases following the revaluation of the business rates. Furthermore, the retail, hospitality and leisure relief is being extended and increased from 50% to 75% in 2023/24.
